Nomikai by Sushi Saint announces Aug. 19 soft opening at ICON Park

Reservations now available for Michelin-starred Chef Michael Collantes’ new Japanese-inspired dining concept on International Drive

ORLANDO, Fla. – (Aug. 12, 2026) — Reservations are now open for one of Orlando’s most anticipated new restaurants. Nomikai by Sushi Saint will begin its soft opening at ICON Park on Aug. 19, bringing Michelin-starred Chef Michael Collantes’ fresh take on Japanese-inspired dining to International Drive with shareable dishes, premium steaks and seafood, inventive cocktails and an atmosphere built around gathering.

Created by Collantes and his 86 Hospitality group, the team behind Michelin-starred Soseki Omakase, Perla’s Pizza and Bib Gourmand-awarded Sushi Saint, Nomikai is the group’s most ambitious concept yet. More than a sushi restaurant, Nomikai is inspired by the Japanese tradition of coming together over exceptional food and drinks.

Named after the Japanese word for a celebratory social gathering, Nomikai invites guests to slow down, connect and enjoy a menu that builds on Collantes’ acclaimed raw preparations while expanding the experience with premium proteins, bold flavors and dishes designed for sharing.

Guests can enjoy salmon aguachile, hamachi truffle potato, traditional sushi rolls and a large-format omakase platter alongside plates built for the table, including koji-marinated dry-aged tomahawks, bone-in ribeye, miso King salmon and lobster noodles. A bespoke cocktail program complements the menu with the same creativity and attention to detail.

The restaurant’s design brings that vision to life with what Collantes describes as a “Tokyo neo-cyberpunk” aesthetic. Neon blues and purples, original artwork and a dark, moody atmosphere are paired with a soundtrack of electronica, house and lounge music. With approximately 120 seats, the space was intentionally designed to maintain an intimate feel while creating an energetic setting for dinner, drinks and celebrations.

Nomikai by Sushi Saint is a locally rooted, chef-driven concept making a deliberate statement in Orlando’s most-visited corridor. As Collantes puts it: “This is what the local guys are doing in the tourist space.”

Nomikai by Sushi Saint joins ICON Park’s growing collection of dining and entertainment experiences, further expanding the destination’s lineup of award-winning restaurants, attractions and nightlife.

Nomikai by Sushi Saint is located at 8371 International Drive, Suite 60, Orlando, Florida 32819 and will begin its soft opening Aug. 19. The restaurant is open Wednesday and Thursday from 5–10 p.m., Friday and Saturday from 5–11 p.m., and Sunday from 5–9 p.m. Guests can enjoy complimentary valet parking on the first floor of ICON Park’s parking garage.
